(COLORADO SPRINGS) — A beloved food truck in Colorado Springs has moved to a brick-and-mortar location and is now open for business.
Owners, Darby Hapgood and Monica Bisek told FOX21 News that after four years of operating a food truck in Colorado Springs, they could not be happier to open their mom-and-pop shop. Their son, Spencer Bisek, has also joined the family business which is now located at 1536 South Nevada Avenue, near the intersection with East Navajo Street.
Back in May of 2022, FOX21 interviewed Darby and Monica live on FOX21 Morning News as they prepared to compete at the 719 Battle of the Food Trucks. Darby told FOX21 that the name—Happy Eats Pasta—was something he developed after getting the nickname ‘Happy’ when he played hockey because of his last name (Hapgood).
“Now that we are in the Urban Development Area on S. Nevada and Navajo we are enjoying Darby’s stomping grounds as he grew up in this neighborhood and went to Cheyenne Mountain High School,” wrote Monica. “We have quickly settled in as we have been in construction since last November and were able to service this neighborhood and meet so many new friends and customers!”
Happy Eats Pasta lets customers choose their favorite noodles, sauces, added protein, and veggies to craft their perfect dish. They also offer small bites, salads, sandwiches, and soups, and don’t forget to check out their ‘fan-fav’ dishes.
“We are quick-style ordering and then we bring all of your delicious food to the table,” wrote Monica. “We serviced all over Colorado Springs and developed quite a fan base with our families because of our ability to expedite, large portions and customer service.”
Happy Eats Pasta is open Tuesdays through Saturdays from 11 a.m. to 8 p.m., on Sundays from 11 a.m. to 3 p.m., and is closed on Mondays.
