(COLORADO SPRINGS) — Milagro’s Cocina Mexicana is a family-owned Mexican restaurant located off of Academy that’s giving a modern twist to traditional dishes.

Co-Owner Eric Morales said, “We try to find these new dishes that you don’t find everywhere and just try to throw in a little bit of traditional flair in there as well.”

The hottest food that has become one of the most popular is their birria items, like the birria taco and the birria quesadilla.

“Traditionally in Mexico it’s [shredded] lamb or goat,” said Morales, “and we’ve incorporated a way to do it with beef, [and] I think people are more open to that flavor profile.”
