(COLORADO SPRINGS) — Elephant Thai, which has been serving delicious street-style food and traditional dishes from Thailand since 2021 in Colorado Springs, is gearing up to celebrate its grand opening after recently moving to a new location in the city.
The grand opening ceremony is set for Thursday, July 18 at 11 a.m. and FOX21 News will be in attendance. While just five minutes up the road from its previous location, the local eatery can now be found at 4703 North Academy Boulevard, which is located near the intersection with Flintridge Drive.
Chef Suwanna Meyer operates Elephant Thai and its sister restaurant, Chaang Thai, which has been in the community for 10 years and is located at 7525 North Academy Boulevard. Chaang Thai is also known for serving authentic Thai cuisine with gluten-free and vegan options at an affordable price.
Chef Meyer gave FOX21 a preview of what diners can expect at Elephant Thai’s new location including; more street food and northern-style dishes, some of which will be exclusive in town, along with monthly specials and a full bar.
“Plus the ambiance will be much more beautiful and elegant and there will be a nice patio for summer,” said Chef Meyer.
While the grand opening celebration will be held on Thursday, Elephant Thai officially opened its doors to the community last week, on Friday, July 12.
