Located just outside of the Colorado College campus on Tejon Street, Evergreen is an aesthetically pleasing escape into dishes with inspiration from central Europe and the Black Sea region. Meals like Paprikash, Branzino, Chicken Kiev, or Beef Stroganoff make you feel like you are eating abroad.

Evergreen’s owners are originally from Russia, and after growing up with these tasty European dishes, they decided to bring the flavor here to Colorado Springs.

“Like here with the mountains, with the same weather, with a similar culture, we feel at home here,” said co-owner Alexey Saprin.

The Evergreen Beef Stroganoff is one of the couple’s favorite dishes. It’s a 6-oz tender filet of beef sautéed to perfection and drizzled with a luscious stroganoff sauce made from earthy mushrooms and aromatic herbs.
