Bay Water Bagels brings fresh flavor to local markets

(COLORADO SPRINGS) — A line begins to form early at local farmers’ markets, and it’s not for produce–it’s for bagels. But not just any bagels. Bay Water Bagels, a small-batch bakery founded by owner and baker Gabrielle Rossignol, is quickly gaining a following for its handcrafted, preservative-free creations and inventive cream cheese blends.

Gabrielle and her daughter Audrianna joined Loving Living Local to showcase her expanding menu, featuring 18 flavors of homemade bagels and seven types of whipped cream cheese.

“We hand-roll every single bagel,” Gabrielle said. “There are no preservatives, no artificial colors, no shortcuts. We’re committed to keeping that our standard.”

Beyond the classic preparation, what truly sets Bay Water Bagels apart is their use of the Maillard browning–a precise baking process that caramelizes the crust, resulting in deeper flavor and richer texture.

One of the most popular bagels is the Jalapeño Cheddar. Gabrielle says she makes more of that flavor than any other, and it still sells out first. Other favorites include blueberry, everything, and salt. Her daughter Audrianna’s pick? “The cheesy one.”

Bay Water Bagels can be found every other Sunday at the Colorado Springs Sunday Market in Acacia Park (9 a.m. – 2 p.m.), and on alternating Saturdays at the Colorado Farm & Art Market behind The Margarita at Pine Creek (10 a.m. – 2 p.m.). A recent addition to their offerings–bagel flights–lets market-goers sample multiple flavors in one convenient box, making it easier than ever to discover new favorites.

Bagel Flights are exclusive to market events, but Gabrielle offers online ordering for pick-up six days a week through BayWaterBagels.com. The business is also exploring local partnerships with coffee shops to expand pick-up options across Colorado Springs.
