(COLORADO SPRINGS) — Summer is a great time to grab fresh local produce, and Colorado has plenty to offer. Chef Janon Bourgeois, teacher and culinary coach, joined FOX21 Morning News on Wednesday, July 23, to share how to pick the perfect produce.
For an easy appetizer, Janon recommends taking Rocky Ford melons and wrapping them in prosciutto. “Even if you’re not a melon or cantaloupe fan, this is the time of year to just change your mind,” said Janon. “Just try it.”
Janon said the trick to selecting a good watermelon is the sound. Give it a knock and listen for a hollow sound. Also, look for a sun spot, which means the melon ripened in the field.
When it comes to Colorado’s famous Olathe sweet corn, Janon said to pay attention to the silk. “Each piece of silk is one kernel of corn,” said Janon. She also said if the kernels go all the way to the top, the corn is ripe. Other produce currently in season: Palisade peaches and tomatoes.
Chef Janon prepared a caprese salad using heirloom tomatoes, mozzarella, basil, drizzled with olive oil and balsamic vinegar. Another dish uses Palisade peaches, basil, and ricotta cheese, drizzled with olive oil and balsamic vinegar.
When it comes to onions, Chef Janon said as a rule of thumb, select onions with a dry “crispy” skin. When the skin is peeled back, the inside of the onion should be shiny.
