(COLORADO SPRINGS) — About a year ago we brought you the story of a Woodland Park family selling pastries out of their home. Now, the family has a store front right here in Colorado Springs called La Concha Bakery & Coffee.
When you walk in the door, La Concha’s display case of pastries definitely catches your eye. They’ve got everything from the traditional Mexican pastry a la Concha (what they’re named after), to donuts.
“My father, he’s a third generation (baker). We used to have a bakery in Mexico,” said Sebastian Romero, the Front Manager and part owner. “We sold the bakery because of COVID, and so in that time we moved to the states.”
That’s the move that took them to Woodland Park, where we first introduced you to their family.
“FOX21… when we start(ed) to sell the Rosca de Reyes for the Reyes day, you came to our house with [reporter Maggy Wolanske], and that was like our beginning,” said Romero.
Now, a year later, their family business has been brought back to life. They partnered up with Sandra Saavedra and her family to make it happen.
“I feel in the hand of the God, in my family and my business. Never expect(ed) that El Paso County… It’s the support. Very, very support(ive),” said Guillermo Ramirez, their 3rd generation baker and part owner. “In the morning the police come, the military people (come).”
With lines to the door, they’re already working on getting more equipment to provide faster service.
“We didn’t expect as much people… We have like a small espresso machine. We (said) like, ‘oh, we’re going to sell like a couple coffees’. Now, we’re selling 60-100 coffees per day,” said Romero.
However, it’s not your average café. They take pride in serving unique treats from a variety of cultures, all baked fresh daily starting at 4 in the morning.
“We’ve tried just about everything they have. Apple strudel is very good. The Tres leches cake is very good. I like the Mazorca, that’s the little cake that looks like a corn on the cob thing. They make some really good breads, too. Some rye breads and sour dough breads. They’re just delicious,” said Stephen Nypaver, who’s been a weekly customer since it opened in January.
Clearly, their bakery is a family tradition so deep, you can taste the love that’s baked in.
“My grandpa started in 1926. (This is) in my dreams. Working together, my family, my wife. My sons working here together,” said Ramirez.
Ramirez’s son Romero added, “You put love in your family, and put that love from your family to your goodies. The people feel it, and the people tell us… ‘Hey, I love your bakery because you feel the love.'”
Just about everyone FOX21 News spoke with at the bakery is a returning customer. Before Reporter Erin Bowling even got inside, someone out in the parking lot told her how good it is.

Since their food is baked fresh daily, they’re working with a non-profit to help feed the homeless– something they did at their old bakery in Mexico, and look forward to giving back the same way right here in Colorado Springs.
