(COLORADO SPRINGS) — Perfecting the perfect pickle isn’t as hard as one might think. Chef Janon Bourgeois, a local chef and culinary instructor, joined FOX21 Morning News on Wednesday, April 9, with some tips and tricks. Below is her recipe for Pickle Brine, though she notes time and temperature will vary, depending on what you’re pickling and how big the pieces are.
Pickle Brine
2 cups Acid (such as Vinegar or Citrus Juice)
1/2 cup Sweetener (such as Sugar or Honey) Use a full cup for sweet pickles
2 Tbsp Salt
1 1/2 Tbsp Whole Spices (such as Black Peppercorns, Mustard Seeds and Star Anise – mix and match to your heart’s content)
As needed – Fresh Herbs (such as Rosemary, Dill and Parsley – also a great opportunity to mix and match
