(COLORADO SPRINGS) — One of downtown’s most egg-straordinary eateries is back after an extensive remodel. The Urban Egg was closed on December 4, 2023, so the space could be updated into what Urban Egg’s Founder, Randy Price, called “a modern, upscale, open-concept twist.”
“Super excited to be reopened on Easter Sunday,” Price said.
About 70% of the restaurant’s staff returned after the hiatus and were able to train some new staff members so that the beloved brunch spot could be reopened as soon as possible.
“It’s been a great opening and the staff are doing a great job and we’re just very excited to reintroduce Urban Egg to downtown Colorado Springs.”
Price said that the building’s interior had kind of “a darker feel” but the space is now more open and modern.
“This building was built in 1911. It’s the only building in downtown Colorado Springs built in Italian Renaissance style. We’re just very proud of the building and very proud of Urban Egg, so we feel like it’s just a perfect pairing and we just invite everyone to come down and take a look at the new Urban Egg. Come see us and we’ll take great care of you.”
