(COLORADO SPRINGS) — Guten tag! In the shadow of Pikes Peak, Edelweiss German Restaurant serves up schnitzels, sausages, strudels, and more to make your taste buds yodel! Get ready as we take a bite out of this German eatery for this week’s FOX21 Foodie Finds.
On Colorado Springs’ southwest side, inside a historic building, lies the Edelweiss German restaurant. This culinary gem has been delighting diners for decades.
“My parents bought the business 35 years ago, but we’ve been in business since ’67. The original owner, Eric, established it, and the building is actually the original Ivy Wild schoolhouse,” shared Owner Dieter Schnakenberg. “We’ve held true to the old-world German recipes, but we also revisit things all the time.”
The restaurant’s signature German dishes draw in those who love a hearty meal and those who miss the taste of home.
“I mean, we serve schnitzel and bratwurst, of course. We also have sauerkraut, which we marinate for three days in vinegar, and a lot of things that you just can’t find anywhere else,” Dieter explained. “I think these offerings attract people to our restaurant.”
And Edelweiss is not just a place to dine but a portal to another world.
“The pastries, the imported German beers, the atmosphere, and the food on top of it. You can’t find that anywhere. It’s like stepping into Germany,” Dieter expressed.
You’ll see strolling musicians on Thursday, Friday, Saturday, and Sunday evenings. They usually play from about 5:30 to 8:30 p.m. The musicians play the accordions, walk around from table to table, sing Happy Birthday, polkas, and German beer-drinking songs, just make it fun.
Dieter and his family’s dedication to authenticity can be seen in every detail, right down to the double-checked tablecloths and cobblestone parking lot.
“It’s just a really unique atmosphere,” Dieter said. “And you honestly couldn’t rebuild this to be what it is because it’s taken 50 years of just constantly like, ‘how can we make this perfect and authentic in every little different aspect?'”
