(COLORADO SPRINGS) — Tucked in a strip mall on the east side of Colorado Springs, something bold is cooking at Rocky Bowl Bistro. FOX21’s Krista Witiak takes us to the restaurant for this week’s Foodie Finds.
The fusion restaurant opened just six months ago, and it’s already gaining attention.
“We’re right by the military base. We’re not far from the airport,” said owner Reese Sattler. “We’re in a corridor of Colorado Springs where people are kind of moving to because there’s a lot of growth happening over here.”
Reese and his wife opened the bistro with one goal: to create a place where anyone could feel at home.
“We had to renovate the whole place,” he said. “I guess I put blood, sweat, and tears into it to make it feel good. I want people to feel comfortable.”
But the real magic? It’s in the food, with flavors from all over the world.
“We have everything on the menu,” Reese said. “It’s Japanese, Korean, Vietnamese, Thai. We have spam fried rice, spam musubi, a little Hawaiian mixed in. We’ve got burgers, wraps — American, too.”
From vegan to spicy, kids to adults — there’s something for everyone.
“Everything on here you should be able to have because it’s so good.”
The menu is a global flavor tour, and Sattler is proud of how authentic the dishes are, even in a landlocked state.
“Anyone who’s had these dishes before should be able to say, ‘That’s pretty close,’” he said.
Some recipes come from real tradition. “We had a Korean grandma give us her recipe,” Reese shared. “We looked at ours versus hers… and we were one ingredient off.”
The beef bulgogi is a fan favorite, but it’s not the only standout. The spicy Thai pica pao and melt-in-your-mouth pork belly keep customers coming back.
“Everything is homemade. It’s all hand-cut and ground down,” Reese said. “We prep it all ourselves. We don’t bring it in boxes and just throw it together. We want it to look good, but also taste as good as it looks.”
The team is small, and everything is done with intention.
“It might not be as fast as other places,” he admitted. “But it’s fresh, good food. It’s going to be worth the wait.”
And in an economy where eating out can feel like a luxury, Rocky Bowl is doing things differently.
“Our goal was, through it all, let’s not raise prices too high. Just enough to live a good life — so people can come in one, two, three, four, even five times a week and still say, ‘This is worth it.’”
Looking ahead, Reese says the future looks bright.
“We should be looking at another location soon,” he said. “I don’t want to get too big for my britches, but everything is pointing toward that, hopefully a bigger spot.”
In a city known for breweries and mountain views, one of the freshest finds is now served in a bowl.
“I think Rocky Bowl Bistro brings what Colorado Springs needed,” Reese said. “I want people to look up ‘great food near me,’ come try us, and think, ‘Oh my gosh, Colorado just left a place in our hearts.’”
