Fresh school lunch recipes from Chef Janon Bourgeois

(COLORADO SPRINGS) — Kids are heading back to class, and Chef Janon Bourgeois is helping parents prepare with some back-to-school basics.

She and her son, Miles, joined FOX21 Morning News on Wednesday, August 6, with some fresh ideas for school lunches. Below are her recipes for “Beefburger Helper” and “Toastie Croque Madame.”

Beefburger Helper

1 lb Rotini Pasta

1 lb Beef Meatballs

2 Tbsp Butter

2 Tbsp Flour

1/2 tsp Salt

1 tsp Black Pepper

1 tsp Garlic Powder

1 tsp Onion Powder

1 Tbsp Ketchup

1 tsp Dijon Mustard

1 tsp Worcestershire Sauce

1.5 cups Whole Milk

1 cup Sharp Cheddar

1/2 cup Cottage Cheese

1 lb Cherry Tomatoes, halved

1 head Romaine Lettuce, chopped

1 cup Cornichon Pickles, chopped

Bake frozen meatballs as instructed

In a large pot of salted boiling water, cook the pasta until al dente (8-11 minutes).

While the pasta drains, use the same pot to melt the butter over medium-high heat. Add flour, salt, pepper, garlic powder & onion powder. Stir until light brown.

Add ketchup, Dijon, Worcestershire, and milk. Stir until there are no lumps.

Add cheddar and cottage cheese. Stir until melted, adding more milk if needed.

Fold in tomatoes and lettuce. Top with chopped pickles.

Toastie Croque Madame

2 slices of White Bread

1 Tbsp of Butter

1 tsp Dijon Mustard

3 slices of Ham

2 slices of Cheese of your choice

1 Egg, fried

1/4 cup Shredded Cheddar cheese

Butter your white bread on one side. Place the two buttered sides together and top one half with Dijon.

Stack atop your ham, sliced cheese, and fried egg.

In a hot pan over medium-high heat, add shredded cheddar all along the bottom. Once mostly melted, place your buttered sides of your bread directly on the cheddar.

Once your bread starts to brown around the edges, flip the sandwich and finish on both sides.
