Governor Polis to sample dishes made with local ingredients

(PUEBLO, Colo.) — On Tuesday, Aug. 27 Governor Jared Polis will be at the Colorado State Fair for the annual Governor’s Plate competition where food trucks are tasked to make a dish using Colorado Proud ingredients.

The competition is set to happen at 5 p.m. on Tuesday at the Colorado State Fair. Governor Polis will sample food from seven food trucks including last year’s winner Stroke Pizza. Governor Polis will then award the Golden Plate to his favorite truck and attendees will select the People’s Choice Award winner.

This year the food trucks were tasked with creating a dish that included Palisade peaches or San Luis Valley potatoes.

The seven food trucks and their dishes competing this year are:

Mother Smothers from Pueblo: San Luis Valley mashed potatoes topped with an award-winning green chili.

Smith Grubs from Pueblo: Cinnamon roll using Palisade peaches.

Stoke Pizza from Pueblo: Wood-fired, loaded baked potato pizza featuring San Luis Valley potatoes.

Wings on Wheels from Pueblo: Burger slider with a Palisade peach compote.

Lady in the Wild from Wheat Ridge: Moroccan-spiced lamb meatball dish with pickled onions, Green-Goddess hummus, Palisade peach jam, and chimichurri.

MC2 Ice Cream Truck from Arvada: gluten-free Palisade peach and whiskey-pecan ice cream, flavored with Stranahan’s Whiskey.

Proto Taste from Denver: finely sliced grilled steak drizzled with Palisade peach steak sauce and topped with grilled onions, grilled peaches, and melted brie cheese, inside Colorado’s own City Bakery hoagie roll.
