(PUEBLO, Colo.) — Four out of five food trucks selected to take part in the 2025 Governor’s Plate competition at the Colorado State Fair are from Pueblo.
According to the Colorado Department of Agriculture (CDA), this year, chefs have been asked to feature Colorado-grown sweet corn or honey produced in the Centennial State. While Governor Jared Polis won’t be able to attend this year’s competition, a guest judge and popular chef from Colorado Springs will take his seat.
“While I would have loved to judge this year’s competition, my fifth in a row, the competition is in good hands thanks to Chef Brother Luck, who will be stepping in as guest judge for this year’s event,” said Gov. Polis. “Brother Luck has helped to shape Colorado’s food scene and champion Colorado cuisine on the national and international stage.”
CDA: The following food trucks will take part in the competition
Mother Smothers (Pueblo) is serving a Pueblo green chile cheesy and creamy corn dip served with corn chips.
Stoke Pizza (Pueblo) is creating a wood-fired pizza made with ingredients from local Colorado farmers, including Colorado Proud honey.
MunchKings (Pueblo) will be making an enchilada featuring corn tortillas topped with an award-winning green chile.
Mollie & Co (Pueblo) will enter the competition with a honey-sweetened green chile and peach ice cream served with dark chocolate.
MC2 Ice Cream Truck (Arvada) is making a honey-goat cheese cheesecake ice cream swirled with freeze-dried corn streusel, served in a honey cornbread cone and finished with shattered Pine Nut brittle and Bing cherry pearls.
Chef Brother Luck will award the Governor’s Plate to the winner, while the crowd will crown the People’s Choice Award. Tickets to the event, which will take place at 5 p.m. on Tuesday, Aug. 26, at the State Fair’s PB&T Bank Pavilion, can be purchased by clicking here.
According to CDA, competing food trucks must be registered members of Colorado Proud, which focuses on locally grown, raised and processed food and agricultural products.
